About Santoku knives
Santoku knives are general-purpose chef's knives originating in Japan. Santoku means "three virtues" or "three uses" in Japanese, referring to the meat, fish and vegetables the knife can handle. Compared with a standard Western chef's knife, a Santoku is shorter, lighter and thinner, with a blade of more hardened steel to make up for the thinness, so if cared for it will hold its edge longer.
This classic Santoku has a flat edge and a thin blade that curves down at an angle approaching 60 degrees at the point. The blade length and weight are matched to the weight of the tang and handle so they work in harmony. Some Santoku knives have a granton edge (a row of dimples along the blade), but Svord's has a classic smooth edge.
About Svord
Master cutler Bryan Baker started Svord out of necessity in 1983. Made redundant at 18 when the engineering firm he worked for closed, he turned a knife-making hobby into a business making a variety of high quality kitchen and outdoor knives at a reasonable price. Starting small, Svord has grown its range over the years and now sells to many countries worldwide. Quality Swedish cutlery steel combined with Bryan's own heat treating and tempering process makes for excellent cutting blades.
Today Svord knives are chosen around the world by food-lovers, chefs, campers and hunters alike.
Care: Hand wash in warm soapy water and dry straight away. Never put it in the dishwasher. Use a wooden chopping board, and store in a knife block, on a magnetic strip or in its sheath. Have it professionally sharpened about once a year, or whenever it starts to feel dull. In Ōtautahi Christchurch we recommend KASS Sharpening Services on St Asaph Street.
We ship nationwide across Aotearoa New Zealand and internationally to selected destinations.
