Dry and fresh and complex aromas of lime, wild honey, orange blossom, ginger, and beeswax. The palate is dense, integrated, and powerful and finishes with a satisfying balance of ripe fruit and fresh acidity. Un-fined and unfiltered and bottled with minimal racking. This wine retains CO2 from fermentation and a fine sediment may form in the bottle. Decanting could be considered.
About Black Estate
Black Estate makes natural wines by hand, from fruit grown organically and biodynamically at their three small vineyards in Omihi, North Canterbury.
Black Estate focuses on the health of their soils and vines and the surrounding ecosystem. Grapes are handpicked and fermented using vineyard derived yeast specific to site and season. Once fermentation is complete, the wines settle naturally in seasoned or neutral oak, tank or clay amphora. No other fining or filtration processes are used and no additions are made except minimal sulphur prior to bottling, (sometimes none).
