Black Estate makes natural wines by hand, from fruit grown organically and biodynamically at their three small vineyards in Omihi, North Canterbury.
Black Estate focuses on the health of their soils and vines and the surrounding ecosystem. Grapes are handpicked and fermented using vineyard derived yeast specific to site and season. Once fermentation is complete, the wines settle naturally in seasoned or neutral oak, tank or clay amphora. No other fining or filtration processes are used and no additions are made except minimal sulphur prior to bottling, (sometimes none).
